The weather outside is frightful! Since heading to the tropics isn’t possible, I decided to create a smoothie that would give me a both a big boost of Vitamin C and create a little beachy nostalgia. The greek yogurt provides protein, while the added coconut oil helps keeps skin soft and protected from the dry weather. Not only that, coconut oil contains medium chain fatty acids, such as lauric acid, that help to improve blood cholesterol levels by increasing he ratio of HDL (good) cholesterol to LDL (bad) cholesterol.
mango banana smoothie (aka “tropical mango smoothie”)
- 1/2 cup frozen mango chunks
- 1/2 medium banana, cut up
- 1/2 cup of orange juice
- 6oz container nonfat greek yogurt
- 1 tsp virgin coconut oil (I like Dr. Bronner’s)
All all ingredients to blender and blend until smooth. Double the recipe if you see your kids or your husband hovering around. My daughter asked for a taste and made the first smoothie hers!
